BAKED CRESCENT PIZZA BREAKFAST

  • Crescent roll dough
  • 1 lb bulk sausage
  • 1 cup frozen hash brown potatoes
  • 5 eggs
  • 1 cup Cheddar or Swiss Cheese
  • 1/4 cup milk
  • 1Ttbs grated Parmesan cheese
  • 1/8 tsp pepper

Brown and drain sausage. Unroll dough on ungreased circular pizza pan. Press seams together with points in center and up the sides a bit. Spoon on well drained sausage, then thawed potatoes, and shredded cheese. Combine eggs, milk, and pepper. Set pizza in oven, then pour egg mixture on top to avoid spills. Sprinkle with Parmesan cheese. Bake 25 to 30 minutes at 375 degrees. Serves 6 to 8.

BAKED CRESCENTS & EGGS

I like to use packages of ham chunks or sliced ham and think it’s great with a smoked cheese. Sometimes I use mushroom slices around the edges of the crust. Rectangular tart pans (spray the fluted edges really good) work well and look much dressier. Enjoy!

BAKED PINEAPPLE AKA BAKED & PUCKERED ENGLISHMAN

  • 1/2 cup margarine (melted) (Butter is always better!)
  • 4 slices white bread cubes (crusts off) I use English Muffins.
  • 3 eggs – slightly beaten
  • 1 cup sugar
  • 2 tbs. flour
  • 1/8 tsp. salt
  • 1 large can pineapple – crushed or cubed ( I prefer cubed) Undrained

Roll bread crumbs in margarine to coat. Set aside.

Mix together: eggs, sugar, flour, salt & pineapple. Place in an 8” or 9” square baking dish. Top with buttered bread cubes. Bake in preheated oven at 350 degrees until firm (approx 30 minutes).

Can be cut and served in squares; I like to scoop into little bowls and have been known to glop whipped cream on top! It’s also a little dressier to cut up English muffins – nice texture, too!
